Yesterday was such a sunny day and after my class at university was cancelled I decided to cook something. I would like to share that sunny mücver (Turkish zucchini fritters) recipe with you! Mücver is Turkish zucchini fritters, a common vegetarian dish in Turkey. I often tasted them in different restaurants and I was curious to prepare them at home and it is really not that complicated.
The preparation is quiet easy, only the frying takes some time. The combination of the zucchini fritter, herbs and the yoghurt is pretty refreshing and was perfect for a sunny day in autumn. And if you can’t finish all fritters they are also tasty the next day!
Ingredients (serves two hungry persons)
- 2 zucchinis
- 1 little onion
- 1 ½ eggs
- 1 cup flour
- 1 handful parsley
- 1 handful dill
- ½ cup cheese (feta cheese or cheddar cheese)
- Salt and pepper
- Oil for frying
- Yoghurt for serving
- Grate the two zucchini and the onion. Put the grated vegetables in a big bowl and mix them with the eggs, parsley, dill, cheese, salt and pepper. Then slowly add the flour, you can vary with the amount, the mixture should be smooth and flexible enough, otherwise the fritters will be too fragile in the pan.
- Heat the oil in a pan and add the zucchini mixture, one tablespoon for one mücver. Fry them on each side for about 5 minutes until they’re golden brown.
- Serve the mücver with yoghurt.
