{Recipe} Vegan and Healthy Start to the Day – Overnight Oats

Lately I heard many positive facts about overnight oats so it was high time that I try them myself! You just have to soak your oats overnight in a liquid (you can use soya milk like I did, or your favorite), put them in the fridge and add some fruits or nuts in the morning. That means you don’t have to use your stove and you will have a really fast and nutritious breakfast. Another positive effect is that you can absorb iron and calcium of the oats better, because of the soaking.

So far I tried two versions of overnight oats; one with apple & dried apricots and one with banana, pomegranate, both were delicious and nutritious! Of course, you can combine many different fruits and berries, depending on the season. The following recipes are serving one person.

Ingredients for oats with apple & dried apricots:

  • 1 cup oats
  • 1 – 1½ cups soya milk (or another liquid)
  • ½ apples
  • 2 dried apricots
  • Agave syrup

Ingredients for oats with banana & pomegranate:

  • 1 cup oats
  • 1 – 1½ cups soya milk (or another liquid)
  • 1 banana
  • 3 tablespoons pomegranate seeds
  • Cinnamon
  • Agave syrup
  • Nuts (I used pistachios, almonds and dried chickpeas)
