In this season I see lots of cauliflower on the market and I never knew how to prepare it properly. Just cooking it in water is kind of boring, but I found another easy way to prepare cauliflower: as rice! Sounds strange? I thought so too, but the result was satisfying.
- one head of cauliflower
- 2 tb of olive oil
- salt, black pepper, pul biber (red pepper flakes), dried mint, dried thyme
- Cut the cauliflower in half and remove the core and leaves and cut it into flowers. Grate the flowers with your grater (as an alternative you can also shred the cauliflower in a food processor).
- Heat the olive oil in a big, flat pan. Then add the grated/shredded cauliflower and fry it about 15 minutes. Then add the spices, you can also add garlic powder or other spices and herbs. By changing the herbs used, you can create a customized flavorful “rice” dish.
- Serve the cauliflower rice like normal rice, alongside your favorite healty dishes. For example, it would fit with a spicy vegetable curry.
