{Recipe} Berry & Chocolate Banana Ice Cream

My two versions Banana Ice Cream Recipe are perfect for hot summer days, you can either have it as a breakfast, dessert or snack. “Ice cream for breakfast? isn’t it unhealthy?” I hear you saying. The answer is no! This two ice cream recipes are industrial sugar and dairy-free since the main ingredients are fruits. You need only a few ingredients and the preparation is quite easy if you have a powerful blender (I’m using this one from Philips*). As a result you have a colorful, healthy and refreshing ice cream.

You can be creative with the toppings, you can use anything and make your ice cream bowl even more beautiful.

Ingredients (ice cream):

  • 1 frozen banana
  • 1 cup* of mixed frozen berries (the mix I used: cherries, blackberries, strawberries, red & black currant, blueberries and raspberries)
  • 1/2 cup of coconut milk (or another non-dairy milk)
  • agave syrup (optional)

Ingredients (toppings, optional):

  • extra frozen berries
  • fresh fruits (I used strawberries, blueberries and passion fruit)
  • chia seeds
  • shredded coconut

  1. Put the banana and berries in the freezer at least one night before you are planning to prepare the ice cream.
  2. Add all the ingredients (except the toppings) to a blender and blend from low to medium until smooth. This may take a few minutes. Using minimal liquid helps thickening your ice cream, but also use liquid as needed to fully blend and smooth out your fruit ingredients. If your ice cream turned out too liquid, put it in the freezer for about 15 minutes.
  3. Serve the ice cream in a bowl and add the toppings of your choice and enjoy.

Ingredients:

  • 3 frozen bananas
  • 1 Tbsp raw vegan cocoa (I used cocoa from koawach*, with cinnamon, cardamom and guarana)
  • 1 cup of non-dairy milk
  • agave syrup (optional)

Ingredients (toppings, optional):

  • apricots
  • blackberries
  • vegan chocolate
  • cocoa
  • shredded coconut

  1. Put the banana in the freezer at least one night before you are planning to prepare the ice cream.
  2. Add all the ingredients (except the toppings) to a blender and blend from low to medium until smooth.
